INPATIENT FOODSERVICE AT EAMC

For four weeks, I interned with the Nutrition and Dietary Department at East Alabama Medical Center (EAMC). During this rotation, I learned the processes and procedures with foodservice in healthcare settings. I also shadowed Miss Lakeisha Teague, the foodservice dietitian. From sanitation to food allergies, I carried out inspections, delivered an in-service training, created a special menu to serve in the cafeteria, prepared the special, created the menu for the EAMC Board Meeting Dinner. The picture shown is the special I prepared for the cafeteria. The special included honey mustard chicken, sautéed green beans and roasted garlic potatoes.
